Fiona Ryan and Chris Grassi are the partners in Papabubble New York, a candy workshop located on Manhattan’s Lower East Side. Fiona Ryan studied under two Australian candy masters working in Barcelona, Spain. To create their locally themed dazzling sweet treats, Ryan and Grassi begin by cooking, coloring and flavoring sugar. Next they stretch, shape and cut it into precious hard-candy bites. Cinnamon, strawberry and licorice are among the natural flavors. Essential oils like mint, anise and lime are also used.
